Recipe: Vegan Romaine Lettuce Wraps

Oh my heaven's ta Betsy! Today I made my new favorite snack/lunch. Whoever thinks healthy food is plain and boring has obviously never tried this.
If you want a delicious meal that is quick and easy then definitely make lettuce wraps.
The beauty about lettuce wraps is that you can literally add whatever ingredients you want to your lettuce. I just threw in what we had around the house (totally random) but they turned out to be amazing!! My niece and I loved them!

I chopped up some onions, bell peppers, tomatoes, and mushrooms. Next I poured in a little bit of extra virgin olive oil in a pan over medium heat and sautéed the vegetables. As the mushrooms started to turn brown, I added spinach to the mixture. Then maybe a minute later everything was ready to eat! (Salt and pepper can be added at the end if preferred.)
It's best to use romaine lettuce since they act as a taco shell or bowl for your food.
Here are my lettuce wraps:

(Romaine lettuce is an excellent source of protein, calcium, omega 3's, minerals, etc.)
Like I said before, you can add whatever you want to your wrap; salsa, fruit, seafood, veggies, anything!
