Here's a light and healthy breakfast idea for those who want to eat healthier. It would also make a great afternoon snack. It's so easy to make & EAT!
You will need:
A bell pepper (Green, Yellow, or Red) I used a yellow one.
First, cut your bell pepper into slices and take the seeds out.
Next, turn the stove on low to medium heat and add olive oil to your pan.
Then, place the peppers in the pan and crack 1 egg in each slice.
Cook (with a lid on) for about 10-15 minutes or until the egg is fully cooked. I flipped mine over just to make sure it was cooked all the way through.
That's it! It's easy, healthy, AND delicious. Give it a try!
It's not the prettiest but you get the point.
[ Add a little sea salt and pepper for more flavor. ]
