Comfort Food 101| Loaded Potato Soup

Hey Y'all! Here's my take on Loaded Potato Soup. Enjoy! 





                           What you'll need

4 Medium/Large Potatoes (diced) 

1 Onion (diced)

Bacon (Use as much as you want) 

4 Tbsp of All Purpose Flour

3 Green Onions (chopped)

4 Tbsp of Unsalted Butter

3 cups of Chicken Stock

3 cups of 2% Milk

1/2 cup of Sour Cream

Salt, Pepper, Garlic Powder 

1 1/2 cups of 4 Cheese Mexican Blend or Plain Cheddar 



Fry up your bacon and set to the side. 

In a large pot add butter and stir fry the onions until translucent. 

Next add in flour and stir for 1 minute until the flour is no longer visible. 

Add in milk, chicken stock, and potatoes. 

Bring to a simmer and cook until the potatoes are soft and tender. (around 25-30 mins) 

Add in sour cream and cheese, stir. 

Crumble up the bacon, add, and stir. 

Use salt, black pepper, and garlic powder to taste. 

Done!

Garish with green onions, bacon, cheese, and sour cream.
