Stuffed Zucchini Boats

One of my favorite vegetables is Zucchini. It's so versatile and you can manipulate it to become whatever dish you want it to become. From noodles and pizza bites to "fries", it really is amazing what you can do with zucchini; not to mention it's freakin' delicious!!

Recipe

4 medium-large sized zucchini 
1 pack of ground turkey 
1/2 chopped onion
3 teaspoons of minced garlic
1 tablespoon of Italian seasoning 
Mozzarella Cheese (As much as you want)
1 cup strained tomatoes
Garlic powder to taste 
Salt to taste
Pepper to taste 




Pre-heat oven to 350. 
Bring a large pot of water to a boil. 
Slice each zucchini in half (vertical not horizontal)
Use a spoon to scoop out the center of the zucchini
(Keep the center for later!)
Make sure you don't over scoop. Don't create a hole at the bottom of the zucchini
Set the zucchini to the side

When the water has come to a boil, place the zucchini halves in the boiling water. 
Let them boil for 1 minute and 20 seconds. (This helps them get tender) 
When that one minute is up, place zucchini halves on a baking pan. 


Brown turkey in a skillet
Add minced garlic, onion, Italian seasoning, salt, pepper, garlic powder, tomatoes and half of the zucchini meat you scooped previously to the turkey. 
Simmer until the zucchini meat, tomatoes, and onions are tender.


After you have cooked your turkey, fill each zucchini boat to the top. 
Add on as much mozzarella cheese as you like. 
Place in the oven. 

Bake until cheese is melted. 

That's it! These are too good. Give them a try. 
The best thing about zucchini boats is that you can fill them up with anything you want. (Ground beef, bacon, mushrooms, bell peppers, etc.)
